This unique blend of framboise (raspberry sour ale) and traditional lambic kriek (cherry sour ale) is aged in oak barrels in our cellar. Fresh raspberries are then added to the wild fermented brew just prior to the final blending, creating a subtle sweetness to balance the tart cherry flavors. Available April-September in 4 pack bottles.

Friek Summer Vinaigrette

It's Salad Season

It’s salad season so we whipped up this lovely Friek Vinaigrette! We recommend pairing it with some bitter greens like arugula or radicchio!⁠⠀

Here’s the recipe:⁠⠀
1/2 cup Friek⁠⠀
2 shallots, finely chopped ⁠⠀
2 tablespoons dried cherries or cranberries⁠⠀
1 tablespoon honey ⁠⠀
2 tablespoons red wine vinegar ⁠⠀
2 teaspoons Dijon mustard ⁠⠀
1/2 cup canola or olive oil ⁠⠀
Salt and freshly ground pepper ⁠⠀

Combine the beer with the shallots, dried cherries and honey and bring to a boil over high heat. Reduce the heat and simmer until the beer has reduced by half – or about 5 minutes. Remove from the heat and let cool.⁠⠀

In a medium bowl, whisk the vinegar with the mustard. Whisk in the beer reduction, then gradually whisk in the oil. Season the cherry beer vinaigrette with salt and pepper.
